Cauliflower Rice

Cauliflower Rice is a healthy grain which can be used for a variety of main or side dishes.

Bubble and Squeak

This is a classic British left over dish, perfect for this time of year, which conisists of cabbage, potatoes and meat. This year we had left over chicken, pork, carrots, broccoli and potatoes and really put in a pan and cooked with tomatoes and a bit of chili. Sometimes we add an egg. Today I have provided a link to Jamie Olivers version. Enjoy

Feta and Courgette Omelette

Feta cheese is not vegetarian as it contains animal rennet. You can purchase vegetarian feta if cheese is you wish.

Smoky Paprika Rub

Chicken is very popular in our home. From stir fry’s, schnitzel, curries and more, ensuring it has a beautiful flavour is essential. My son Aidan actually put this rub together, rubbed it over the chicken breast and baked it! I was impressed, so I thought I would share with you all.

Pumpkin and Pomegranate Salad

I made this in our thermomix, however, I think its pretty easy to convert. Feel free to change or substitute any ingredients you aren’t a fan of, I used spinach leaves instead of kale. And just so you know- butternut squash is butternut pumpkin here in Aus!

Pumpkin and Carrot Salad

I had this as a lunch, and it was quite filling. With the warm weather approaching it is a nice change. Taste should be slightly sweet and sour with the roast veg flavour, sprinkle with feta and pepper for look!!! It will turn heads.
